Slow Cooker Mashed potatoes

[low FODMAP] Slow cooker (s)mashed potatoes

This is a great dish to make when you are having a ton of people over and want to be hands off up until serving. This to me means you can do other things up until you need to mash, which for me is super valuable to get other things done.

Ingredients

  • 10 lbs potatoes red yellow or white
  • 1 1/2 cup chicken stock
  • 1 teaspoon onion infused oil
  • 1 teaspoon garlic infused oil
  • 1/2 cup butter
  • 1/2 cup sour cream
  • salt & pepper to taste
  • milk or cream to taste

Instructions

  • Cut into chunks. I like to leave the skins on, but if you don't like that peel them.
  • Place potatoes, stock, garlic powder and onion powder into a large slow cooker or instant pot.
  • Cook on high 3-4 hours or low 6-7 hours, stirring every hour or so or until tender.
  • Mash potatoes until smooth. Stir in butter, sour cream. Season with salt & pepper to taste.
  • Serve or keep on warm until serving.
