[low FODMAP] Gluten Free Crepes Or Tortilla

Here’s a great versatile recipe that helps you make amazing crepes! But don’t get hung up on the name this is also an execllent recipe to make gluten free Tortilla’s! I have tried and tested many different flour mixes and I feel like this is the best one. FYI, in a pinch you can just use all corn flour, but you can’t rely on browning to tell you when it’s done if you do use all corn flour.

Gluten Free Crepes

Great recipe for when you want crepes, and no other solution will work.

Ingredients

Dry Ingredients

Wet Ingredients

  • 2 eggs lightly beaten
  • 1 1/2 cup Lactose Free Milk (You can just use plain old water if you don't have any, not as good but works. Also can use some other non-dairy milk product, like almond milk)
  • 3 tbsp salted butter for the mix
  • 1 tbsp butter for the pan

Instructions

  • Throw, your frying pan on the stove, turn it on to medium, and toss the 3tbsp of butter for the mix in. (Let's melt butter)

  • Add all the dry ingredients. (Flour, corn stach, baking soda) into a bowl. Give it a stir to mix the ingredients.
  • Make a little bowl with the dry ingredients. (Use you hand to make a depression in the middle or the dry ingredients) and place the wet ingredients (eggs & milk) into this bowl. Stir it all up so that it's well mixed.

Is your batter "thin" enough to make crepes?

  • Put your whisk in the batter and withdraw it. If the batter "falls off" within a couple seconds. It's good, if it takes 3-5 seconds to fall off, add a little more water/milk.

  • Stir the now melted butter into the better.
  • Let the batter sit and do it's thing for ~20 mins.

Cooking crepes

  • Heat up your panon Medium heat. You can totally re-use the pan you used to melt the better that way it's pre-greased.
  • Pour in ~ 1/4 of batter into the frying pan. Try your best to spread it across the entire pan by 'tilting' the pan to move the batter around.
  • Cook the crepe until it bubbles then flip it. Totally use your flipper to loosen the crepe up from the pan and toss it up in the air catching it back in the pan. Make sure you say "Ta Da" if you nail it. If you don't you have more crepes to practice with… so go for the glory! I promise this make cooking way more fun! (The picture attached is just a little early to flip but give you the idea)
  • Cook for about 1 more minute, or until you think it's time.
  • Repeat ~7 more times or you run out of batter
